Super Bowl Bites We Can All Be A Fan Of

Honestly, we pretty much all watch the big game for two reasons: commercials and food! When your team isn’t playing all that passion has to go somewhere and it might as well be in the kitchen. We’re sharing our favorite game day recipes. Try them out, take your own spin on it and be the real MVP of the game. Sorry, Tom Brady, your spiral will never taste as good as our jalapeño sausage!

 

Creamy Artichoke and Spinach Dip from nourish + nosh

Ingredients

2 cups chopped kale, finely chopped

2 cups fresh spinach, finely chopped

1 bag of frozen artichoke hearts thawed, finely chopped

1 large red pepper, very finely diced

1 large shallot, finely diced

1 garlic clove minced

¼ tsp smoked paprika

1 tsp salt

1 tsp fresh black pepper

½ tsp onion powder

1 cup organic sour cream (or ½ cup sour cream and ½ greek yogurt)

3 tbsp organic mayo (healthy fats!)

3 tbs raw parmesan or manchego cheese, plus more for top

1 cup daya vegan cheddar cheese or mozzarella, or your choice of shredded cheese

coconut oil for greasing

Directions

Preheat oven to 375 degrees

Mix all ingredients together in a large bowl and place into a greased medium sized baking dish (8×8 or 9×9)

Top with additional cheese if desired

Bake for approximately 30-45 mins covered

Remove from oven, and let sit for at least 5 mins before serving with whole wheat pita or tortilla chips,  or my favorite – rice chips!

 

Lorna’s Mac and Cheese

Ingredients

1 8oz block of Cracker Barrel Sharp Cheddar Cheese

1 12oz can of evaporated milk

Salt – to taste

Pepper – to taste

2 tbs of flour

1 box of macaroni noodles

Directions

Bring 4-6 quarts of water to boiling, add salt for taste and throw in noodles

Preheat oven to 350 degree

Slice cheddar cheese

In a bowl toss cheese and flour until cheese is covered

Once noodles are done cooking drain and return them to saucepan

Place on low heat and add evaporated milk and cheese mixture, add salt and pepper to taste

Stir constantly until cheese is melted

Transfer mac and cheese to a casserole dish

Cook covered in the oven for 20 mins

Uncovered for another 5-10 minutes

 

Jalapeño Sausage

Ingredients

2 12oz sausage links of your choice

4 jalapeños

Olive oil

Directions

Slice the jalapeños and sausage

Cook the sausage with a little olive oil for 5-10 minutes

In a separate pan cook the jalapeños with a little olive oil for 5 minutes

Then transfer the jalapeños to the sausage pan to give the sausage a mild kick

Let cook until sausage is no longer pink and at an internal temp of 160 degree

*For a spicier sausage, you can cook the sausage and jalapeños together from the start!
